Why does it deserve our mention?

Great quality salmon to start with and a traditional method of suspending the fish in smokehouses, which gives the salmon a subtle smoked taste. The selection of the salmon, a few of which are wild and most farm-raised in Salmo Salar, Norway, is very carefully done. Only the specimens which have grown slowly in captivity, enjoying more space and therefore having less fat, are chosen. Both the salting process, done with dry salt rubbed into each piece, as well as the slicing process, are done by hand. The premises are located next to the Barthouil Adour river which has a natural population of salmon and flows into the Atlantic. Their tradition of smoking goes back fifty years, always using the special timber Aliso. It is in Denmark where they acquired the knowledge for smoking, cutting and cleaning the salmon. The result is a creamy salmon that melts in your mouth and each bite reminds you of the excellence of their exquisite art of smoking.

How should you eat or cook it? 

Open 20 minutes before consuming. The ideal combination is baguette bread, some butter and a thin slice of salmon on top.

What wine should you have with it? 

With a Pink Champagne like Gosset Grand Rosé.

In the fridge between 0 and 4 °.
