At Loison the Panettone is made as it should be from the very start with fresh, natural ingredients such as butter, cream, milk, precious natural vanilla from Madagascar, together with another vital component, time! More than 72 hours are needed for the natural yeast to perform its function and for the organoleptic properties to enhance the flavour of this panettone. This natural yeast is obtained from spontaneous fermentation of wheat flour, water, milk and fruit, all natural and without any chemicals, and freshly made every day. No additives or preservatives. This traditional method, with carefully selected natural ingredients, gives the product its long lasting soft and spongy texture. A Panettone baker who was born an artist working in a traditional way, and who today, three generations later remains faithful to his principles. Bravo!!
