Why does it deserve our mention?  

San Daniele has always been renowned for its commitment to professionalism in its production of ham. Mr Levi Gregoris in his capacity as prosciutto trader selects the best legs, curing techniques and storage whilst also being able to take advantage of the excellent weather conditions in San Daniele del Friuli, which offers a natural balance between limited humidity and excellent aeration. After an average sixteen months of slow curing, passing from cold winter to hot summer the hams are ready and due to this unique process they retain all their flavour.  Parma ham is always pitted which is one of its identifying features, the meat comes only from pigs reared in northern Italy and only salt is used in the curing process and no chemicals. The "pressatura" is an exclusive treatment of the San Daniele ham and revolves around pressing the legs into a violin shape which allows the salt to penetrate the ham better. Thus, once the leg is slightly pressed, the consistency of the meat is ideal  and ready for sale.

Alone on a plate at room temperature (not cold!).

With an Italian sparkling white a Prosseco LaMarca of Veneto.
