Why
does it deserve our mention?
It
has an intense greenish yellow color and manages to balance perfectly both slightly sour and spicy in its taste,
representing the best of the Picual variety . This oil is 100% natural and one
has to bear in mind that in order to make 1 litre of olive oil it takes eight
to ten kilos of ripe olives. This variety of olive oil has a high resistance
against oxidation and has a high percentage of oleic acid which is very
beneficial to our cardiovascular system. The cultivation of the oil takes place
in the foothills of Sierra Morena under the influence of the Guadalquivir River
Valley, 400 meters above sea level, this combination is a decisive factor for
good ripening which is also aided by the fact that the region enjoys a
year-round average temperature of between 16 and 18 º.
How
should you eat or cook it?
On its own, accompanying bread or salads. It is also delicious drizzled over
meat or fish either grilled or baked.
What
wine should you have with it?
With a white wine, idealy a Pouilly Fumé from
the Chateau de Tracy.
