Why does it deserve our mention? For the interesting sweet-salty twist of these oysters bred and aged in Ireland, a taste which derives from the variety of plankton that the oysters feed from for a period of over three years. As a proof of how fleshy these oysters are we ought to know that the proportion of meat can reach 180 grams per kilogram. Oysters are born and bred in France for six months, after which they are moved to the clean, rich waters of the West of Ireland, to Clew Bay in the Connemara area, for almost three years. The last period of the oyster's life, the aging, takes place in the Bannow estuary, a river with a large population of salmon which holds a wealth of minerals and plankton. An important factor in understanding the quality is the low density of oyster population in these marine parks, which enhances the regular and uniform growth of these amazing oysters.
