Why does it deserve our mention? For being hand made with a special technique from the producer, and for the scent and flavor given by the exclusive use of the Italian grain variety "Saragolla". One of the wonders of these Gentile Handmade Fusilli is their resistance to overcooking. The drying process is very slow (almost three days) following the method called "Cirillo" after which its cut by hand. Gentile is the oldest pasta maker in Gragnano, a town near Naples which is known worldwide as the "Città della Pasta". Since 2010 Gragnano enjoys PGI distinction, Pasta di Gragnano. A history that begins in the year 1100 when the Arabs brought the pasta from North Africa to Sicily and from there to the Naples area.
How should you eat or cook it? With a splash of extra virgin olive oil and grated Parmigiano Reggiano cheese on top.
What wine should you have with it? With a white wine such as the Bodega Polena Donnafugata from Sicily.
