Why does it deserve our mention? For
being a ham with all the characteristics associated with Prosciutto
di Parma: a suggestive aroma, a texture that melts in the mouth and finally its
unmistakably delicious taste. The Galloni company is a family run business that
has fifty eight employees and was founded in 1960. The production of the
Parma Ham is shared with the manufacturing of the delicious
Parmigiano-Regianno cheese, the reason for this is that the pigs are fed, in
part, with the milk serum discarded in the manufacturing process of the Parmigiano, a natural compound very
rich in proteins and nutrients.The salting process is still done by hand, piece
by piece, by specially trained personnel using the minimum amount of salt for
each piece possible. This salt comes from a thermal area near to Lisignano and
Salsomaggiore, which due to it its high sulphur content allows less salt to be
used whilst still ensuring excellent preservation of the meet and enhancing
it’s taste. The genetic selection of the pigs, their breeding and their diet
are all aspects that the Galloni family pursue with care and passion and they
have done since the company was originally founded. This ham "Selezione
Oro" is cured for a minimum
period of twenty months, and is healthier than other hams for it uses less salt
in its preservation process so you can enjoy it any time.
How should you eat or cook it? On its own, finely cut and taken out of the refrigerator 30
minutes before serving.
What wine should you have with it? Serve
with a sparkling wine like Nino Franco Prosecco.
