Why does it deserve our mention? For its two hundred and three acres of oyster beds, as well as for the expertise which goes back five generations to 1880, and moreover, for aging the oysters in an ideal location for this delicate process as is the mouth of the Belon in Brittany. Jean Jacques is a member of the family who has now taken over the family business. The "Special" oyster is a mature oyster, size 2, which at four years of age is transferred from the open waters of the sea bed to the quiet and rich "pools" of the mouth of the Belon. They spend three to six months aging, while their flesh is transforming into something sublime, crunchy, meaty and topped with a special and unique softness provided in this final phase, where the rich mix of fresh and salty water varies depending on the tides which take place in this natural estuary in Brittany. A real treat for oyster lovers.
How should you eat or cook it? Alone or with a squeeze of lemon and salted butter over fresh bread.
What wine should you have with it?  A cold white Muscadet Luneau Papin, D. Pierre Grange Vieilles Vignes.
How should you keep it? At the bottom of the fridge between 6 and 9 degrees.
