Why does it deserve our mention? It is recognized as one of the outstanding prosciuttos.  The Montali family is very protective of their ham and they work tirelessly to continue to offer a high-quality product, always made from pigs that were first selected for their breed, origin and natural feed. Master salters from S.Ilario do the salting, leg by leg, with sea salt, during a period that lasts roughly 25 days, varying the amount of salt depending on the weight, and thus ensuring one of the most outstanding characteristics of S.Ilario, its sweetness, or its low salt content.  This is a completely natural prosciutto, where meat and salt are the only ingredients.  The 30-odd months that the hams are cured in a natural environment is what produces depth of flavor and elegance.  A prosciutto as mild as this is always the perfect accompaniment to many dishes, vegetables as well as fruits or even fish.
How should you eat or cook it?  Put thin slices on a plate and eat.
What wine should you drink with it? A Champagne like Taittinger Brut Reserve.
