Why does it deserve our mention? For being the first French olive oil to receive the AOC (controlled designation of origin) in 1994, for its fatty texture and its aroma of fresh-cut grass.  One hundred kilos of Tanche olives are necessary to make 20 liters of this delicious extra virgin olive oil.  It is pure fruit juice, obtained only by physical processes, without using any chemical products or preservatives at all.  The olives are picked when they are a little over-ripe, during December and January, they are black and their flavor is a unique mix of green apple and butter.  They are picked by hand, and are at the press a maximum of 48 hours later.  They are kept at below 27ºC at all times after picking to keep from losing the natural aroma of the olives.   It is Provence in a bottle.
How should you eat or cook it? As a dressing for salad and on baked fish or grilled vegetables.
What wine should you drink with it? There is a moment for oil and a moment for wine and they are separate.
