Why does it deserve our mention? 

Its delicious texture and long, low temperature drying process, which gives it optimum digestibility.  Made mostly by hand, it has its roots in respect for tradition, which has led them to make only four shapes of pasta: spaghetti, penne classiche, spaghettini and the above -mentioned Tuscan macaroni. The Martelli family has worked at their artisanal workshop, in Italy called a pastifico, since 1926 and produce small quantities, always from hard-grain semolina that they mix with cold water.  The bronze molds and the low-temperature drying process, that never goes above 35ºC, are the decisive factors in making a delicious and authentic pasta that “tastes like semolina”, thanks to the porous nature of the pasta.  It mixes perfectly with any kind of sauce.  Very flavorful.

How should you eat or cook it? 

Boil in abundant water, with a pinch of salt, until the macaroni are al dente.  Accompany with arrabiata or Bolognese sauce.

What wine should you drink with it?

A red like Chianti Castello D Alba Riserva.

How should you keep it? 

In a cool, dry place.
