Why does it deserve our mention? For the perfect combination of the best
fresh winter truffle and duck foie gras of the highest quality. Maison Pébeyre was
founded in 1897, but it wasn’t until 1920, when they moved to Cahors, that they
began to offer their know-how in everything relating to truffles. The truffle is impulsive, rare and very
seasonal (from October to mid-December) and very hard to find. Because it grows underground, in forests,
near only a few kinds of trees, man needs the help of trained dogs to find
them. Black truffle can make up 10% of
this foie and we find it masterfully cut and incorporated in thin slices. The most exquisite detail is that, in this
case, the truffle doesn’t take away from the foie but accompanies it in
harmony, achieving both fantastic flavor and scent. A 100% natural product where, apart from the
foie gras, the only other ingredients are Tuber
Melanosporum truffle, salt and pepper.
How should you eat or cook it? Remove from
the refrigerator 30 minutes before eating and prepare on slices of baguette or
toasted country bread. Putting a bit of
flor de sel on top is optional.
What wine should you have with it? A sweet Sauternes like Chateau Bastor
Lamontagne.
