Why does it deserve our mention? For its authenticity and respect for the traditional formula of the Liguria region, in Northern Italy, right on the Mediterranean and close to the French border.  The ingredients are just what they should be, but which are rarely found together in other pestos in the supermarket.  The first and most fundamental ingredient: fresh basil from Liguria, pine nuts (no cashews, please!), pecorino cheese, salt, a little garlic and the indispensible extra virgin olive oil from Liguria.
Combined with pasta, Galateo pesto sends you the perfume of Mediterranean cuisine and they make an absolutely succulent combination.  The gastronomic project started by Galateo & Friends also offers other sauces and olive oils of the highest quality.  One of the best pestos in the world.
How should you eat or cook it? With pasta, adding just a little of the hot water left over from boiling the pasta, or on salads.
What wine should you drink with it? A white wine like Marco Felluga Collio from the Friuli-Venezia region.
How should you keep it? In a cool, dry place before opening and, once open, in the refrigerator with a drizzle of extra virgin olive oil to cover the top layer.
