Why does it deserve our mention? For their know-how, accumulated during more than 200 years making foie gras in Alsace, and because they do such a good job of combining tradition with an extensive line of foie gras and foie products that reaches almost 100.   This is, without a doubt, one of their star products.  First, because of their use of goose rather than duck, which is more widely used in southwest France and second because of their use of truffle, which is also part of the Alsatian foie tradition.  This foie has undergone a heating process at 110ºC and is canned to permit an expiration date almost four years from the date it was prepared, while still preserving the refinement, creaminess and elegance resulting from the combination of truffle with goose foie gras.  The passing of the years in a can gives it a changing and very interesting bouquet.  Artzner offers here an exquisite preserve that can be enjoyed in any place or at any time.
How should you eat or cook it? It is recommended to put it in the refrigerator 24 hours before serving and to use a hot knife to cut.
