Why does it deserve our mention? 

If the little city of Vic were considered the world capital of salami, Pau Arboix, owner of Casa Sendra, is the king of salami. This gastronomic delicacy has been made since 1854 and contains exclusively lean meat from the white pig (not Iberian): thighs, loins, and belly.  These pigs receive a natural diet and are raised on farms situated in a 10 km radius from Vic.  Exceptional quality natural tripe is used to form the salamis, and they are left for many months, almost a year, in a long natural curing process.  At Casa Sendra they boast, with well-deserved pride, that they don’t add any colorings, preservatives or flavorings to their salami, a sign of the purity of this product, in which only sea salt and black pepper are added to the pork. This sublime salami, without a doubt, offers us something unique in all the world and that has yet to be surpassed after 150 years.

How should you eat or cook it? 

Sliced thin on a plate by itself at room temperature.  Or with a slice of artisanal bread, lightly toasted and rubbed on one side with a very ripe tomato, with a pinch of salt and a bit of extra virgin olive oil.

What wine should you have with it?

A sparkling wine like Cava Recaredo Brut Nature Gran Reserva.

How should you keep it?

In a cool, dry place.
