Why does it deserve our mention? Without a doubt, the most refined and sophisticated butter on the market.  Jean-Yves Bordier, the master of butter, has been making and selling it at La Maison du Beurre (The House of Butter) in Normandy’s Saint Malo since 1985.  Its production and refinement in a cellar make it one of the best butters in France and in the world.  While a normal butter is made in about 6 hours, this one needs three days for its production, a process largely done by hand.  Bordier offers us, on one hand, a range of traditional butters like doux (unsalted), demi-sel (lightly salted), and sale (salted).  On the other hand he breaks with tradition and convention with his special range like the Roscoff Algae, with an intense sea flavor, and the Smoked Salt, which is a mix of pepper, onion, the Au Yazu, with a sweet and sour Japanese spice that’s close to lemon, or the latest creation, au Piment, with paprika with an AOC (controlled designation of origin)  Piment d’Espelette. They are an exquisite mouthful by themselves.
How should you cook or eat it? By itself, on a slice of fresh baguette or melted as a sauce for baked fish. 
What wine should you drink with it? With an excellent white like Domaine aux Moines with AOC (controlled designation of origin) Savennières - Roche aux Moines.
How should you keep it? In the refrigerator, taking it out 15 minutes before eating.
