Why does it deserve our mention?  

The secret of this canned food comes from maximum respect for the raw materials, as well as the selection of the best pieces.  Only Galician mussels (Mytilius galloprovincialis) with a guarantee of origin and from Ría de Arosa, which grown in the beds of that inlet, are used to make this gourmet delicacy.  The largest ones are chosen for the 7-10 variety (since the 4-6 and 6-8 are scarce,) are checked to make sure they are perfect, and must have been  brought from the sea that day, since it is a requisite for production.   The artisanal production of the marinade gives it an extraordinary balance and smooth flavor.  The delicacy of the marinade comes from its secret formula, one of the best guarded secrets chez Franco: extra virgin olive oil, white wine vinegar, paprika, laurel (from the estate itself) and salt.  Large, meaty, fatty, flavorful mussels placed in the can delicately one by one by feminine hands.  Each year, this family of canned food makers that began in 1960 has to vary the production of their marinated mussels depending on the sizes available.  The sea is who decides the quantity to be produced each year.  Purity and tradition conserved.
