Why does it deserve our mention? 

Their delicious coupage, fruity and spiced.  Made up of three varieties of Tuscan olives such as Frantoio (70%), Moraiolo (20%) and Leccino (10%). These olives are pressed at the Bodega Marchesi di Frescobaldi in the Chianti region, which is part of a consortium of 30 Tuscan landowners who have been uniting their forces and their olives since 1986 to make this superlative olive oil.  The olives are harvested at the end of November each year and are pressed no more than 40 hours later to preserve their aroma and freshness.  The name Laudemio comes from the part of the harvest that was reserved for the landowner during medeaval times, who was, in the end, the owner but not the one who worked the fields.  Its has an intense green color.  In the mouth it is fruity with notes of tomatoes on the vine, bitter almond and spices.

How should you cook or eat it? 

Alone on a dish, accompanying a baked fish or on top of fresh pasta.

What wine should you drink with it? 

A red like Tinto Marchesi di Frescobaldi Toscano.

How should you keep it? 

In a cool, dry place.
