Why does it deserve our mention?  

This family has been making cheese for more than 500 years and they continue to be true to traditional methods.  A small production, with an average of 40 cheeses a day, controlling the entire production process.  Sixty percent of the milk used by Gennari comes from the more than one thousand cows they own.  They use very creamy milk, with little whey, making and aging the cheese themselves.  Usually cheeses are aged between 12 and 24 months, but the Gennari Reserve is aged for 48 months.  We think that this gives it more balance, although they have, in exceptional cases, aged cheeses for 110 months.   The 48-month cheese is bumpier, more compact and irregular than younger Parmesan cheeses, but it doesn’t lose the elasticity of good Parmesan.  As happens with a good Iberian ham, the white pigments typical of a well-aged product can be seen much more clearly in these exclusive Gennari Reserves. A complex and enveloping taste with clear notes of nuts like hazelnut, walnut or chestnut.  Scented and with an incredibly long-lasting taste, it maintains its scent and flavors even after opening and being kept in the refrigerator.

How should you eat or cook it? 

By itself at room temperature or grated in on pasta or risotto.

What wine should you drink with it?

With a young red like Pruno 2011 from Finca Villacreces  with DO Ribera del Duero (Spain).

How should you keep it? 

In a cool, dry place, and, once cut, in the refrigerator.
