Why does it deserve our mention?  

For the depth of its flavor and its fascinating aging process.  Remember that to merit the name Traditional Balsamic Vinegar of Modena, it must come entirely from the slow cooking of Trebbiano and Lambrusco grapes. If it is also an affinato , it must have been aged in cherry, oak, or chestnut barrels for no less than 12 years.  In our case, when they speak of Extra Vecchio (extra-aged) the aging process must be a minimum of 25 years (100 kilos of grapes are needed to make a liter of extra-aged vinegar!) Its aroma of ripe plums, its density and its concentration reach unimaginable levels.  But in any case, fulfilling the mandatory aging time is not enough.  A jury made up of five experts from the Modena consortium, in a blind test, have the last word on approving the vinegar, which, in the event it passes that last test, will be able make it to the market, 25 years later, as Balsamic Vinegar of Modena Protected Denomination of Origen Extra-Aged.

On boiled vegetables, a few drops on a good Parmigianno Regianno. cheese or with ice cream.
