Why does it deserve our mention? 

They are 20-22 Engraulis Encrasicholus selected anchovy fillets fished in the Cantabrian Sea during the months of April, May and June as they pass by this coastal area on their annual reproductive migration. Once clean and sliced anchovies are left maturing for 10 months in a medium to low salt content. At the end of the process they are put by hand one by one in a can and covered with the best olive oil. Only sold at the best and most select specialized and gourmet shops.

How should you eat or cook them? 

Alone in a plate or on top of a ripe tomato.

What wine should you drink with them? 

A white wine like Chablis Première Cru William Fevre.
