Why does it deserve our mention? 

The tagliatelle made by Domenica y Beppe, founders of TartufLhange, were born thanks to their imagination and culinary experience. In 1967 they opened Restaurante Beppe, right in the historic center of Alba, the world capital of the truffle.  The truffle has been recognized and used for culinary purposes since somewhere between 1600 and 1700 BC. Tagliatelle nº19 is an ideal combination of pasta made using an artisanal method and durum semolina and fresh eggs (24%), low humidity of only 7% and a very valuable high percentage of fresh truffle, which can reach up to 7% of the final product.  An intense and balanced taste, with a touch of crunch and exquisite consistency make it a real experience for your taste buds.  It is as easy as boiling it in abundant water and tasting it.  Enjoy it alone, with just a bit of good extra virgin olive oil to be able to appreciate all of its refinement and penetrating depth. Without a doubt the best truffled pasta in the world.

With a red from the region, a Barolo Fontanafredda Serralunga d Alba 2007.
